November 30, 2009 at 7:03 PM i can't believe november is over in 5 hours. seriously, i blink my eyes, swirl into depression and BAM it's christmas. because to me, the whole month of december is holiday related. so today i'm trying to relish in fall like behaviour for just a few more minutes. and that includes soup making. last year i was diggin' on this chili. this year it's tortilla soup.
2 chicken breasts
2 tbs vegetable oil
1/2 cup white onion, diced
1/2 cup green chilies, diced
1 tsp minced garlic (about 3-4 buttons)
4 cups chicken broth
2 tbs cornstarch
6 oz shredded mixed cheddar and monterey jack cheese
3 corn tortillas, minced
2 tbs lime juice (about 2 limes)
1/2 cup canned diced tomatoes
1/2 tsp cumin
1/4- 1/2 tsp cayenne pepper
1/4 tsp oregano
1/4 salt
saute the chicken in a little water and oil until just cooked through. chop into bite sized pieces and set aside. in a large saucepan cook onions, pepper and garlic in vegetable oil over low heat for about 15 minutes. dissolve cornstarch in a bowl with a little water, then add mixture to saucepan along with broth and remaining ingredients over medium heat. stir constantly to help the cheese melt. when soup bubbles reduce heat and simmer for 20 minutes. um. yum. serves about 6.
